Almond Biscotti

I was pleasantly surprised to find out how quick and easy (and stress-free) it was to bake my own biscotti. Even more so, the list of ingredients was manageable and it yielded almost 20 biscotti! I might have eaten a few out of the oven…but I can’t remember…I think I did.

I am notorious for re-posting other peoples’ recipes, so here I go. I loved using this recipe because it actually outlines not just this recipe, but three other ways to make biscotti. I subbed out the almond extract for almond paste and I loved how my biscotti were a bit more chewy rather than hard.

What a delightful Saturday morning treat to accompany your coffee. I’ll definitely be making these again soon, and maybe even double the batch! It makes for a great housewarming gift, unconventional potluck dessert or breakfast pastry, or just look pretty in a jar on your kitchen countertop.
