Arugula Salad with Parmesan & Lemon Vinaigrette

I love a salad with an arugula base - it is bold, peppery, and light at the same time! I threw together this salad for a recent summer family get-together and I absolutely love its simplicity and fresh lemon taste. It pairs so well with any meal - we had pizza and some appetizers - but I could imagine it going well with a variety of roasted vegetables, chicken piccata, or a glass of chilled white wine! It is really only three major ingredients so it is foolproof to put together for a single serving, or to serve at a party!

Ingredients

  • 3 cups arugula, washed

  • Toasted pine nuts

  • Shaved Parmesan (Pecorino works, too)

  • Salt and pepper, to taste

Lemon Vinagrette

  • Juice of 1 lemon

  • Honey

  • Olive Oil
