Bitter Apple Cider Spritz Cocktail

Do you ever really want to make a cocktail but you’re missing a key ingredient? Do you go ahead and make it anyway, and hope for the best? Well, sounds like we have something in common…because that is almost always how it goes for me!

That was exactly the case with this bitter apple cider spritz. I had a hankering to make something quick, but we didn’t have a key ingredient: prosecco. Would it turn out OK? I can answer that for you right now…yes, it certainly did!

The effect of cutting the prosecco from this drink is that it turns out a lot more bitter, which isn’t exactly a bad thing. It’s a moody little drink, super spicy (in all the best ways) and also a little sweet. The typical Aperol Spritz calls for 3 parts prosecco, 2 parts Aperol, and 1 part club soda. Instead of the prosecco, I subbed in a apple cider from a local farm. It was delicious, autumnal, and by adding star anise to the glass for garnish, it suddenly turned Christmas-y! Whenever you have this, whether it be in the cooler autumn months or the festive holiday season, I think that this drink is a win. If you wanted to add the prosecco, it would simply add a delicious fizz - can’t go wrong there.

Bitter Apple Cider Spritz Cocktail | Serves 1

  • 1 shot (1.5 oz) aperol

  • 3 oz. apple cider

  • 3 oz. club soda

  • star anise and apple, for garnish

I started with aperol, apple cider and ice then added the club soda and anise and a slice of apple for garnish. It definitely helps to give this a nice gentle swirl before drinking, to stir up some of the aperol and let it all mix together. I am no mixologist but I think this turned out pretty nicely for a moody, seasonal and spicy drink! It is a perfect make-ahead ready drink for welcoming your guests into your home this holiday season!
