Cucumber Ginger Agua Fresca
Summer is in full swing and I am so excited to devote more time to my creative side hustle and this lovely blog! I will have more time during the day, and with nap time I am gaining about 2ish hours a day towards photography, blogging, and other collaborations. Right now I am working on a queue of summer journal posts, and let me tell you I am really enjoying this workflow. I am sipping the most delicious cucumber ginger agua fresca, brainstorming future posts, and planning my summer schedule! This might be my new weekly tradition…naptime mocktails and content creation!
I am notorious for taking a Pinterest recipe and adapting it to be my own. For this cucumber ginger agua fresca, I added ginger beer instead of gin (to make it a mocktail). This drink has a ZIP to it, with the added ginger beer. It’s delectably spicy, yet refreshing and cooling with the cucumber. You know how ginger and cucumber have natural anti-inflammatory properties? Can we make an argument that this drink will de-puff, de-bloat, and de-stress? I am thinking yes.
Ingredients (Makes 2 drinks)
1 cucumber, diced and peeled (for garnish)
Juice of 1 lime (or sweetened lime juice, I love the Rose’s brand)
About 6.8 oz ginger beer (non-alcoholic, I loved the Fever Tree brand)
1/2 cup club soda
Mint leaves
I began by slicing and peeling the cucumber into pieces. The glasses got a nice long thin sliver peeled for garnish, and I added the diced pieces to the bottom. Next, I added lime juice and ice. In a separate glass, I mixed the ginger beer and club soda with all of the remaining cucumber pieces. The recipe I borrowed from recommends waiting 10 mins to let the cucumber flavors set in. I added fresh mint and a cucumber peel for garnish.
Note - this is easy to turn into an alcoholic beverage…just add a splash of gin!
This agua fresca is the perfect summertime accompaniment to an al fresco dinner, brunch with friends, or for guests at your next dinner party! Happy mocktailing!
