Frozen Blackerry Granita

This mocktail was made for hot summer nights and large gatherings! If you really think about it, this combination of late summer ingredients is really magical. You’ve got ripe sweet blackberries, fresh mint, refreshing lemon, and the zip of lime! It is so refreshing and simple, you’ve got to try it with your in-season blackberries! I made this in two separate batches, and changed a few things my second time around. It made a world of a difference and I learned a little bit about how to improve this drink so it is even more enjoyable!

First, this drink can be made either with frozen blackberries or ice. I preferred to freeze my fresh blackberries overnight, so that is really Step 0 in this whole process. What I love about this drink is that it is very large-batch friendly and great for serving guests. If you’re hosting, I would highly recommend saving yourself the trouble and time by making this up to 1-2 days ahead. Up your measurements, and this will be the easiest way to serve guests without stressing out in the moment. Lastly, use a collander, strainer or cheese cloth to remove some of the grittier blackberry bits after blending! But don’t drive yourself crazy, a granita has texture and it makes the drink!

Blackberry Granita | Serves 4

IN THE BLENDER:

• 2 cups blackberries (preferably frozen, if not add 1 cup ice)
• simple syrup 1/4 cup
• lime juice of 2 limes
• lemon wedge (throw it in the blender - whole thing!)
I used a NutriBullet blender that is ancient. Your Ninja or Vitamix will be better than mine!

PREPARE YOUR GLASS:

• pour the blended blackberry granita mixture in about 1/4 of the glass
• top with club soda
• add lemon, mint, blackberries for garnish
