Cinco de Mayo Mocktails

It’s one of those holidays that you’re into mostly for the food: Cinco de Mayo. In this case — food and drink! Whenever May 5 comes around I always dream up visions of empanadas, elote, chips and salsa, fajitas, and of course frozen fruity margaritas! How amazing it would be to dig into that kind of spread this weekend. In the kitchen, I am admittedly quite bad at copying my favorite Mexican restaurant dishes. But if I could pick one thing to be good at, it would be frozen margaritas. I’ve practiced over the years and I think mine aren’t half bad, especially given that I make mine in the a Nutribullet. 🤫😉

I present to you this beautiful layered margarita! It’s a slushy masterpiece of mango and strawberry mixed with simple syrup, orange juice, and of course a generous squeeze of a few limes. These margaritas are certainly going to get “wows” from guests because of their beautiful color. I garnished with a sugar rim and a lime wedge, plus a fun paper umbrella for that extra kitschy detail. You’ll definitely need a straw for these delectable frozen concoctions, so try for some festive bright paper straws. For an added touch of sophistication, try chilling the glasses.

Recipe adapted from Eating Well

  • 3 cups frozen mango chunks (I used WholeFoods brand)

  • 3 cups frozen strawberries (I used WholeFoods brand)

  • Simply Fresh 50 Orange Juice (1/2 cup)

  • 1 cup water

  • 1/4 cup simple syrup

  • Lime juice

  • Sugar (for rim, optional)

The recipe will need to be divided in order to create the layered look - but it all tastes delicious together, and even looks great if it is swirled! First, I wrote down what I needed for each flavor. In this case, the strawberry portion went first. I was careful to rinse all ingredients out of my nutribullet blender before moving onto the mango portion. Luckily for me (and you!), the ingredients are super easy to manage and are identical except for the fruit.

In a nutshell, I added the frozen fruit bits to 1/4 cup OJ, 2 tbsp simple syrup, 1/2 cup water, and a squeeze of lime juice. I repeated this for each fruit, and truthfully you’re gonna need to blend to your desired consistency. This recipe called for 1/4 cup OJ but I felt that it was too thick, so I ended up adding about 1/4 cup more per portion. It yields two nicely sized drinks, and makes a damn mess in the kitchen - but it’s fun!

If you are making this for a crowd of four, double the recipe. Let me know how you like it once you try!
