Sparkling Grapefruit Refresher

Before you read this I have to admit that grapefruit isn’t my thing. I never understood how people eat it with a spoon and call it breakfast. That being said, I figured it was about time I try it in a mocktail and see for myself. Since the taste doesn’t quite cut it for me, I thought adding a herbal infused simple syrup might add a delightful twist on the citrus flavor. I snipped a few sprigs from my rosemary topiary (which is LOVING LIFE this summer in its new outside patio residence) and concocted a super-easy, but elevated rosemary simple syrup. A little grapefruit here, a little rosemary there, and voila! A sparkling grapefruit refresher. Seeing as I am not a huge grapefruit person, I have to concede that this fruit is THE fruit to use to achieve that bubbly, barely-there-pink color in a drink. This is the perfect drink for a signature drink at a little girl’s baby shower or sip & see, for a late summer day, or even to pregame the Barbie movie!

sparkling grapefruit refresher | serves 1 (i used a small coupe glass)

  • juice of 1/2 grapefruit

  • Fever Tree Sparkling Grapefruit juice

  • 2 tsp. rosemary simple syrup (see here for recipe)

To make it boozy, I would add a dash of prosecco or perhaps even gin.
