Stonefruit and Thyme Mocktail

I have a bowl of fruit that I keep on my kitchen counter and every time I look at it I think to myself, โ€œis there a mocktail recipe hiding among these fruit?โ€ I always try to use fruits in-season, and I am not averse to trying unusual fruit combos. Usually it all tastes good! So I was recently looking at my nectarines and peaches, and thinking that with the right mixers and the right consistency, there is a mocktail to be had!

I cut up my nectarines and peaches ๐Ÿ‘ for a delicious fruity non-alcoholic beverage. It is simple, almost tooooo simple, and needed something for some added dimension. Turns out all I needed was a little bit of THYME! ๐Ÿ˜‰

Thyme is one of the most visually stunning and delicate herbs, which makes it a great garnish. Itโ€™s hard to describe how it tastes, but it nicely cut down the peachiness of this drink with its earthy, almost grassy flavor. Thyme has loads of benefits so I am inclined to use it more โ€” not just in mocktails, but maybe in simple syrups, and possibly even in homemade skin treatments! I would have to do some research, but I am learning so much about thymeโ€™s healing properties that date back centuries.

Stonefruit & thyme mocktail | Serves 2

  • Juice of 1 lime

  • 6 oz (1 can) Polar Club Soda

  • 2 Peaches

  • 1 Nectarine

  • Thyme Simple Syrup (which is 1:1 sugar, water, and thyme)

  • Thyme for garnish
