Strawberry and Avocado Salad with Caramelized Walnuts and Goat Cheese

Do you ever scroll Pinterest for food inspiration? I do, and this is how this salad was born! I saw a photo of this delicious looking salad and didn’t even bother to look at the recipe - it was that easy. I threw my own twist on it and it turned out to be a filling vegan salad with lots of crunch and flavor.

Fun fact about me - I actually don’t really eat meat in my salads. When it comes to salads, I’m usually meal prepping and the thought of refrigerator chilled chicken sometimes grosses me out. I think this would be great with hot fresh grilled chicken or even shrimp.

Strawberry Avocado Salad

  • 2 cups Spring Mix/Spinach Mix

  • Handful strawberries, chopped

  • 1 avocado, sliced

  • Caramelized walnuts, chopped (you can easily make your own or buy store-bought)

  • Goat cheese crumbles

  • Dressing of your choice (I used Amy’s Creamy Balsamic Vinaigrette)
